Black Beauty

Black Beauty is a common name for different heirloom varieties of vegetables, from eggplants to zucchini to tomatoes, and typically refers to varieties that are a deep saturated, almost black color. 

Pretty much any plant that shows up purple, black, blue, or pink is thanks to a water soluble pigments called anthocyans! Whether it's berries, carrots, eggplants, tomatoes, black soybeans or black rice, it's all thanks to anthocyans. The cool thing about this pigment is that it protects the plant from high light or cold stress, and those pigments also decrease your oxidative stress when you consume them, too! AND Anthocyanins are also ph indicators, so in an acidic environment, they show up in the colors we expect, but in more alkaline environments they show up as blue or green.

As far as Black Beauty varieties, sometimes they're purple, sometimes they're green, but our shade of Black Beauty is a beautiful blackberry shade. It is a warmer, redder purple, pairing wonderfully (and purposefully) with our new Tomato Festival color way!
