Dandelion
$33.00This humble “weed” is actually incredibly useful. All parts are useful, and they are great for supporting our little pollinator friends. Much like the other flora in this collection, all parts of the dandylion can be used for different purposes. This is in part due to their deep taproots, which pull nutrients, along with minerals and nitrogen (which naturally revitalizes your garden!)
Dandylions’ bright yellow flowers are rich in polyphenols and antioxidants. These can be eaten raw and have a subtle honey-like flavor. Dandylion flowers are frequently used in dandylion jelly, and can be a wonderful addition to your salad. Since these flowers are packed with micronutrients, they can be used in soothing salves that have mild pain-relieving effects that can calm your external aches and pains after a long day of foraging.
The green stem and leaves of the dandylion are packed with nutrition that may have you thinking twice about your preconceived ideas of this wonder plant. In those humble greens you will find Vitamins A, C, E, K, B6, beta carotene, folate, thiamine, riboflavin, calcium, iron, potassium, and manganese. As a result, these plants have a wide range of benefits, ranging from anti-inflammatory (acne, redness), antifungal (warts, acne prevention), antioxidants, easing digestive issues, and improving liver function. Dandylion roots can be used as a coffee substitute (and you can add in some of the flower for a honey-like taste!).
